If you choose to take fewer classes in a semester, your Sim will stay in university for a longer period of time before graduating.
If you want to strike a good balance between classes, I highly recommend that you stick to two core classes and a single elective: a total of three classes per semester. It will take 20 in-game days, or four whole terms, for this to be completed.
You can either graduate as an adult, or you can use the Potion of Youth aspiration reward to slow down the aging process until you graduate.
Your Sim should apply to university once they have some scholarships. There is a computer that Sims can use to apply to university. The University of Britechester and Foxbury Institute can be researched on a computer, which will show them an information popup about all the degrees they offer.
The degrees your Sim has been accepted into will be revealed when your Sim receives their acceptance letter. Depending on your Sims' grades and skills, they may be accepted into one school, but not the other.
